“Xmas Pudding dates all the way back to Hogwarts’ founding, and perhaps even earlier! Many families have their own secret recipes for this traditional holiday dish, also known as plum pudding, so we can assume that the castle kitchen makes a very special one for the students and staff.”
Xmas Pudding Recipe from 'The Unofficial Hogwarts for the Holidays Cookbook'

Prep Time: 15 Minutes
Cook Time: 3 ½ to 4 Hours
Ingredients:
1 cup raisins
1 cup chopped dried apricots
1 ½ cups all-purpose flour
1 ½ teaspoons baking soda
¼ teaspoon salt
1 cup finely grated butter, plus more to butter the pudding mold and aluminum foil
1 cup fresh brown breadcrumbs
1 cup light-brown sugar
1 cup mixed nuts
1 teaspoon ground cinnamon
¼ teaspoon ground allspice
¼ teaspoon nutmeg
¼ teaspoon cloves
¼ teaspoon ginger
¼ teaspoon coriander
1 cup milk
1 large egg
Butterscotch sauce
Directions:
1. Use a pan with a wider circumference than your pudding mold and fill it halfway with water. Place it on the stovetop over low heat to simmer while you prepare the pudding.
2. Butter the inside of the pudding mold and set it aside.
3. Combine the dried fruit, flour, baking soda, salt, butter, breadcrumbs, sugar, nuts, and spices in a large mixing bowl.
4. Add the milk and egg. Combine the ingredients together until they are well incorporated. Pour the mixture into the pudding mold.
5. Cut two squares of aluminum foil large enough to cover the top of the pudding mold.
6. Butter the inside sheets of the foil and place both layers over the mold. Create a crease in the middle of the foil to make space for the pudding to rise properly.
7. Gently place the pudding mold into the simmering water. The water should come up to about halfway on the mold. If it doesn’t, add more water until it does.
8. Steam the pudding for 3 ½ to 4 hours, with the foil tightly in place. Check the water level throughout the steaming process and top it up if too much evaporates.
9. Once the pudding is solid enough to flip out of the pan onto a plate, you can either serve it immediately or let it cool for 10 minutes before wrapping it in cling wrap and new foil and placing it in the refrigerator.
10. Pour Butterscotch Sauce over the pudding to serve.
