Choco balls full of strawberry mousse and clotted cream from 'The Unofficial Hogwarts for the Holidays Cookbook',
Makes: 24 to 30 Choco balls
Prep Time: 25 Minutes
Chill Time: 40 Minutes to 1 hour + 20 minutes
Ingredients: 24 ounces almond bark or melting chocolate, divided Clotted Cream, Strawberry Mousse, Candy truffle mold
Directions:
1. Melt half the chocolate according to package instructions.
2. Place the melted chocolate into a pastry bag and squeeze a bit into each cavity of a truffle mold.
3. Using clean hands, tamp down the chocolate onto all of the walls of the mold.
4. Let the chocolate set, 20 to 40 minutes. The chocolate will set much more quickly (20 minutes or so) in the refrigerator.
5. Once the chocolate has set, spoon ½ to 1 teaspoon of each of the Clotted Cream and Strawberry Mousse into the chocolate shells, either alternating between flavours or combining them in each shell.
6. Melt the remaining chocolate and put it in the pastry bag. Squeeze out more chocolate to seal.
7. Encapsulate the chocolate balls, tamping down the chocolate to seal.
8. Refrigerate for 20 to 40 minutes to set. The colder the chocolate, the easier it will be to remove the balls from the mold.
9. Carefully pop the chocolate balls out of the molds. It may take a few attempts to get them out without damaging them.
10. Enjoy the Choco balls!
